{"id":4094,"date":"2021-08-10T13:59:27","date_gmt":"2021-08-10T11:59:27","guid":{"rendered":"https:\/\/mavitecrendering.com\/?post_type=applications&#038;p=4094"},"modified":"2021-12-21T08:45:30","modified_gmt":"2021-12-21T07:45:30","slug":"defatting","status":"publish","type":"processes","link":"https:\/\/mavitecrendering.com\/nl\/processes\/red-meat-rendering\/defatting\/","title":{"rendered":"ontvetten"},"content":{"rendered":"<p>Na verwerking van vlees, botten en slachtafval bevat de dikke fractie van het product nog vetten, die door ontvetten verwijderd kunnen worden.<\/p>\n<h2>Waarom ontvetten nodig kan zijn in het renderingproces:<\/h2>\n<ul>\n<li>De positieve effecten op het omgaan met maaltijden<\/li>\n<li>Verbeterde houdbaarheid van eindproduct<\/li>\n<li>Hoge waarde van de teruggewonnen vetten in vergelijking met de vaste stoffen (eiwit)<\/li>\n<li>Wettelijke richtlijnen zouden deze scheiding kunnen eisen.<\/li>\n<\/ul>\n<h2>Voor batch-ontvetten:<\/h2>\n<p>1. Tijdens het droogproces wordt het meeste water verdampt. Het gedroogde product wordt overgebracht van het batchdroogproces voor verdere scheiding van vetten\/olie en vaste stoffen.<br \/>\n2. Afhankelijk van het product kan het product worden afgevoerd via een schuine transportband.<br \/>\n3. Het uitgelekte product wordt naar de Vetpers getransporteerd voor verdere ontvetting en om het ontvette meel te lossen (knetteren). Ontvetten wordt bereikt door mechanische druk uit te oefenen op het gekookte product.<br \/>\n4. De geperste vetten, die nog kleine hoeveelheden vaste stoffen bevatten, worden behandeld in de sectie Vetbehandeling.<\/p>\n<h2>Voor continu ontvetten:<\/h2>\n<p>1. Het meeste water wordt verdampt, in de droogsectie. Het gedroogde product wordt overgebracht van het continue droogproces voor verdere scheiding.<br \/>\n2. Eerst worden de vrije vetten afgevoerd door een afdruiprek\/bezinker.<br \/>\n3. Het uitgelekte product wordt naar de Vetpers getransporteerd voor verdere ontvetting en om het ontvette meel te lossen (knetteren). Ontvetten wordt bereikt door mechanische druk uit te oefenen op het gekookte product.<br \/>\n4.
